This Organic certified coffee is an SHG EP which is the highest grade a specialty Mexican coffee can receive. SHG (Strictly High Grown) specifies that the coffee was grown at an altitude above 1350 meters. This term is also synonymous with SHB (Strictly Hard Bean). EP (European Preparation) specifies that the raw beans are all hand sorted to remove any defective beans and foreign material. ROAST PROFILE Chiapas Coffee is strictly high-grown, between 1200-1800 meters. High-grown specialty coffees from Mexico are considered among the best in the world. Chiapas is contiguous with Huehuetenango (Guatemala) and coffees share much of the same cup profile. The best Chiapas offerings are extremely clean and balanced, with light nut and fruit notes. When roasted light to medium roast, this Organic Mexican Chiapas coffee brews a complex cup with underlying caramel sweetness and an acidity that has a tangy berry, candied citrus quality. The finish is clean, no nutty or dry aspects, and a candied citrus note is a highlight in the finish. Full City roasts develop layers of dark toffee sweetness flavors with a raisin and blackberry jam fruits note laced in. A really versatile Mexican coffee that will yield a sweet, complex cup of coffee at a wide range of roasts. FARM PROFILE Chiapas is the southernmost region in Mexico, sharing a border with Guatemala to the west, and Oaxaca to the east. The mountainous highlands of Chiapas provide an ideal climate in terms of temperature and humidity for arabica cultivation. Here coffee is grown under a natural forest canopy that is prevalent throughout the region, providing natural shade for the coffee trees. Our Organic certified Mexican coffee is farmed on the 5-hectare, Las Vergel Estate located in the Sierra de la Concordia municipality, in the state of Chiapas.
